What you has written is the same as (notice the '!' suffix)

  result.sub!(/\{/,'[')
  result.sub!(/\}/,']')

Above can be chained, so it becomes

  result.sub!(/\{/,'[').sub!(/\}/,']')

Try 'gsub'

  result.gsub!(/\{/,'[').gsub!(/\}/,']')
