And you have also installed the gtk bindings for Ruby? 
(Just checking the semi-obvious)

If so, check in your lib/ruby directory to make sure you have gtk.so
On my system, it is located at
  /usr/lib/ruby/1.6/i586-linux-gnu/gtk.so
but this varies from system to system.

If it isn't there, perhaps you forgot to do "make install" or "make
site-install" when installing the gtk bindings.
