There are a few ways to do this, this one seems to work:

Dir.chdir 'C:/'
files = Dir.glob('**/*.pdf') +
        Dir.glob('**/*.txt') +
        Dir.glob('**/*.docx')
files.each do |fname|
  File.rename File.absolute_path(fname), 'D:/document/' + 
File.basename(fname)
end
