One of the best resources I've seen is John Shea's stuff. He's busy writing openGL games in MacRuby and he's also ported the Hillegass cocoa examples. You can find a repository of stuff at http://public.me.com/johnmshea - in particular look at the /MacRuby/Game related/mine/presentation (he used to have a ppt version but that seems to have disappeared).
