The first thing that comes to mind:

   text.sub(/(X-Level: )(\*+)/) { $1 + 'X' * $2.size }

or, in Oniguruma, using look-behind:

  text.sub(/(?<=3DX-Level: )(\*+)/) { 'X' * $1.size }
