String#gsub interprets the backslashes (for use with e.g. \1). In this  
case it's replaced with everything after the '. Escape it doubly to ge
t what you want:

 >> s = "blah'blah"
=> "blah'blah"
 >> puts s.gsub(/'/, "\\\\'")
blah\'blah
