Another option is to use VNC http://www.uk.research.att.com/vnc/ If you don't want to make a VNC connection to the entire desktop you could write a VNC server that just handled the GUI of your app, and then you could connect to it with any VNC client. See the example at: http://www.uk.research.att.com/vnc/rfbcounter.html A ruby GUI toolkit built on BitBlt (rather than native widgets) could have a VNC server as one of its backends.
