You can do this:

begin
  folder = File.join(path, dir)
  recurse(folder, max_depth - 1) if max_depth > 0 
rescue Errno::EACCESS, Errno::SomethingElse => e
  STDERR.puts "Caught #{e}: Skipping folder '#{folder}'..."
end
