It is indeed possible to store Classes in regular variables, because 
they are just regular objects:

foo = String
foo_obj = foo.new # => ""
foo_obj.class == foo # => true
foo_obj.class == String # => true

bar = Class.new(String)
bar_obj = bar.new # => ""
bar_obj.class == bar # => true
